As a low-iron girlie, steak is my go-to. I remember always eating incredible steaks in restaurants and being severely underwhelmed every time I tried to recreate them at home. Which, in my mind never made any fucking sense because how is it so hard to cook a good steak? I went to great lengths to spend stupid amounts of money at boujee butchers on different cuts of steak, thinking it was the cheap cuts of beef and not my lack of steak-cooking knowledge. Apparently, it’s not about what you’re cooking but how you’re cooking it. I will add though, investing in high-quality, organic, fresh meat is a game changer - but I acknowledge that it isn’t accessible to everyone (sadly).
Okay, let’s cook a sexy steak, shall we?
1. Pull your steak out from the fridge 30-40 minutes before you plan on cooking it. It must come up to room temperature to get the sexy steak effect.
2. Pat it down or wrap it up with paper towel. The aim is to remove moisture!!
3. Smother it in olive oil and flaky sea salt (high-quality of both) and rub it in.
4. Place a naked pan on high heat. It’s ready to cook when you splash a few droplets of water on it and it evaporates immediately. (a naked pan is a pan with nothing on or in it).
5. Drop a spoonful of butter into the pan and quickly swish it around so it covers the whole pan.
6. Place your steak in and return the pan to heat.
7. Cook for 3-5 minutes on each side, depending how you like it. I’m a medium rare girlie.
8. Remove it from the pan and let it rest on a clean, dry board/plate for a few minutes
9. Serve with literally anything. Here I’ve done charred greens, cooked in garlic and butter finished with lemon zest. Steak topped with Blue Cheese and Fried Garlic.
Voila.
